Bang Bang Chicken Bowl

A delicious and vibrant bowl featuring juicy chicken, sautéed vegetables, and a creamy sauce, perfect for beginner cooks.

  • 1 lb chicken breast (substitutes: tofu or shrimp)
  • 1 bell pepper, sliced
  • 1 carrot, sliced
  • 1 cup snap peas
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha (or to taste)
  • 2 green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1 tbsp sesame seeds
  • 2 cups jasmine rice (or quinoa/rice noodles)

Instructions

  1. Cook the base according to package instructions.
  2. Heat a tablespoon of oil in a large skillet over medium-high heat. Season diced chicken with salt and pepper, add to skillet, and cook for 5-7 minutes until golden and cooked through.
  3. Add vegetables and sauté for an additional 3-5 minutes until just tender.
  4. In a small bowl, combine mayonnaise, sweet chili sauce, and sriracha. Adjust spice according to taste.
  5. In a bowl, layer your base, then the chicken and vegetable mixture, drizzle with sauce, and top with green onions, cilantro, and sesame seeds.

Notes

Customize with different proteins or vegetables. For an even lighter option, use quinoa or rice noodles as a base.
