Beef Stroganoff

A comforting dish featuring tender beef, creamy sauce, and sautéed mushrooms perfect for cozy family dinners.

  • 1 lb beef (sirloin or tenderloin)
  • 8 oz cremini or button mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup beef broth
  • 1 tbsp Dijon mustard (optional)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Slice beef into thin strips against the grain and chop the onions and mushrooms.
  2. In a skillet, heat olive oil and butter over medium-high heat, add beef and sauté until browned. Remove and set aside.
  3. Add more butter to the pan, sauté onions until translucent, then add mushrooms and cook until golden brown.
  4. Return beef to the skillet, stir in garlic, Dijon mustard, and beef broth, scrape up bits from the pan, and simmer for 5 minutes.
  5. Lower heat, mix in sour cream, season with salt and pepper, and adjust consistency with broth if needed.
  6. Serve over egg noodles, rice, or mashed potatoes, garnished with fresh parsley.

Notes

Prep ahead by slicing beef and chopping vegetables to save time. Cook in batches if necessary to avoid steaming the beef.
