Chipotle Ranch Grilled Chicken Burrito

  • 2 skinless, boneless chicken breasts, marinated in chipotle seasoning
  • 1/2 cup chipotle ranch dressing
  • 4 tortillas (flour or whole wheat)
  • 1 cup fresh lettuce, chopped
  • 1 cup tomatoes, diced
  • 1 cup bell peppers, sliced
  • 1/2 cup onions, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice (white or brown)

Instructions

  1. Marinate the chicken in a blend of chipotle peppers, garlic, lime juice, and olive oil for at least 30 minutes.
  2. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Allow to rest before slicing.
  3. Prep the vegetables: chop lettuce, tomatoes, bell peppers, and onions. Cook and season the rice with a dash of salt and lime.
  4. Assemble the burrito by laying a tortilla flat, adding rice, sliced grilled chicken, fresh vegetables, cheese, and chipotle ranch dressing.
  5. Wrap the tortilla by folding in the sides and rolling from the bottom to the top.
  6. Grill the wrapped burrito for a couple of minutes until golden and crispy.
  7. Cut in half and serve with extra chipotle ranch for dipping.
