High Protein Creamy Beef Pasta

A comforting and hearty dish featuring creamy beef and pasta, perfect for quick weeknight dinners.

  • 1 lb ground beef
  • 8 oz pasta (penne, fusilli, or fettuccine)
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 8 oz mushrooms, sliced
  • ½ cup Parmesan cheese, grated
  • 1 teaspoon dried basil or Italian seasoning

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve about a cup of pasta cooking water, then drain and set aside.
  2. Sauté the Vegetables: In a large skillet over medium-high heat, melt the butter. Add the diced onion and sauté until translucent, about 3-4 minutes. Then, add minced garlic and sliced mushrooms, cooking until the mushrooms release their moisture and become tender, around 5-7 minutes.
  3. Brown the Beef: Push the vegetables to the side of the skillet and add the ground beef, breaking it apart. Cook until browned, approximately 5-6 minutes. Season with salt, pepper, and dried herbs.
  4. Make the Sauce: Once the beef is cooked through, reduce heat to medium and add heavy cream and grated Parmesan. Stir to combine and allow the sauce to simmer gently for about 5 minutes. If the sauce is too thick, gradually add reserved pasta water until it reaches the desired consistency.
  5. Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to coat in the sauce. If desired, fold in extra veggies like spinach or broccoli.
  6. Taste and Adjust Seasoning: Taste and adjust seasoning with more salt, pepper, or herbs as needed.
  7. Serve: Plate the pasta, garnishing with extra Parmesan and freshly cracked pepper.

Notes

Great for using up vegetables; consider adding spinach or cherry tomatoes. Reserve pasta water for sauce consistency.
