Crock Pot Beef Stew

A comforting and hearty beef stew, perfect for chilly evenings, made effortlessly in a crock pot.

Ingredients

  • Beef chuck roast (2 to 3 pounds)
  • Beef broth (4 cups)
  • Carrots (3-4, sliced)
  • Potatoes (2-3, diced)
  • Onions (1-2, chopped)
  • Celery (2 stalks, chopped)
  • Garlic (3 cloves, minced)
  • Tomato paste (2 tablespoons)
  • Fresh herbs (like thyme and rosemary, to taste)
  • Olive oil (for browning the beef)
  • Salt and pepper (to season)

Instructions

  1. Brown the beef: Heat a tablespoon of olive oil in a skillet over medium heat. Sear the beef chunks until browned on all sides.
  2. Prep the veggies: While the beef cooks, chop your vegetables into uniform sizes.
  3. Assembly in the crock pot: Place the browned beef into the crock pot along with onions, garlic, carrots, and celery. Layer the diced potatoes on top, add tomato paste, pour in beef broth, and sprinkle with herbs. Stir gently.
  4. Cooking: Set the crock pot on low for 8-10 hours or high for 4-6 hours.
  5. Serve: Once cooked, taste and adjust seasoning. Ladle the stew into bowls and garnish with fresh herbs.
