  • 1 lb Baby potatoes
  • 4 cloves Garlic (minced)
  • 4 tbsp Unsalted butter
  • 1 tbsp Fresh herbs (e.g., thyme, chopped)
  • Salt and pepper (to taste)

Instructions

  1. Prepare the Ingredients: Begin by washing and halving the baby potatoes. Pat the beef dry, and season generously with salt and pepper. Mince the garlic and chop the fresh herbs.
  2. Cook the Potatoes: In a large skillet, heat 2 tablespoons of butter over medium heat. Add the halved potatoes cut side down. Cook until golden brown and tender for about 15-20 minutes, flipping halfway and seasoning with salt and pepper.
  3. Sear the Beef: Push the potatoes to the side of the skillet, add the remaining butter, increase heat to medium-high, and add beef bites in a single layer. Sear for about 2-3 minutes on each side until desired doneness.
  4. Add the Garlic: Reduce heat to medium, add minced garlic and herbs, stirring continuously for about 1-2 minutes.
  5. Combine and Coat: Mix potatoes back into the skillet for final minutes, coating everything in garlic butter sauce.
  6. Serve Warm: Transfer garlic butter beef bites with potatoes to a serving platter and drizzle with remaining butter sauce. Enjoy!
