Grilled Cheese Burrito

A delightful fusion of classic grilled cheese and a burrito, brimming with gooey cheese and savory sautéed mushrooms, all wrapped in a crispy tortilla.

  • 2 flour tortillas (or corn for gluten-free)
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup sautéed mushrooms (button or cremini)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced mushrooms and a pinch of salt. Sauté until golden and tender, about 5 minutes.
  2. In a bowl, combine the cheeses with garlic powder, cumin, and paprika.
  3. On a tortilla, spread a layer of cheese mixture on half, followed by the sautéed filling. Fold and tuck to form a burrito.
  4. In the skillet, melt butter over medium heat. Grill the burrito seam-side down for about 3-4 minutes until golden brown. Flip and grill the other side until crispy and cheese is melty.
  5. Allow the burrito to cool for a minute, slice in half, and serve with dipping sauce like salsa or guacamole.

Notes

For extra crispiness, press down gently while grilling. Experiment with fresh herbs for added flavor.
