Healthy Cucumber Pasta Salad

A refreshing and vibrant cucumber pasta salad that’s perfect for summer gatherings.

Ingredients

  • 8 oz whole grain pasta
  • 2 fresh cucumbers, finely diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh herbs (basil, parsley, or dill)
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and cool.
  2. Finely dice the cucumbers and halve the cherry tomatoes.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. In a large bowl, combine the cooled pasta, cucumbers, cherry tomatoes, and fresh herbs.
  5. Pour the dressing over the salad and toss to coat evenly.
  6. Chill in the fridge for at least 30 minutes before serving.
  7. Garnish with additional herbs or crumbled cheese if desired.

Notes

For added flavor, consider incorporating sautéed mushrooms or crumbled feta cheese. This salad is best enjoyed fresh but can be stored in the refrigerator for 2-3 days.
