Sourdough Pesto Grilled Cheese

A delightful twist on the classic grilled cheese sandwich, featuring the unique flavors of pesto and the tanginess of sourdough bread.

  • 4 slices sourdough bread
  • 1/4 cup fresh basil pesto
  • 1 cup sharp cheddar or mozzarella cheese, shredded
  • 2 tablespoons unsalted butter
  • Optional: sautéed mushrooms, fresh tomatoes, leafy greens (spinach or arugula)

Instructions

  1. Prep Your Ingredients: Gather your sourdough bread, cheese, and pesto. If adding mushrooms or tomatoes, slice them now.
  2. Preheat Your Skillet: Use a non-stick skillet over medium heat.
  3. Butter the Bread: Spread butter on one side of each slice of bread.
  4. Assemble the Sandwich: On the non-buttered side of one slice, spread pesto, add cheese, and any optional add-ins. Top with the second slice, buttered side up.
  5. Cook It Up: Grill the sandwich in the skillet for 3-4 minutes on each side, until golden brown and cheese is gooey.
  6. Slice and Serve: Remove from skillet, let it sit for a minute, then slice in half.
