Spinach and Feta Quesadillas

Deliciously crispy quesadillas filled with savory spinach and tangy feta cheese, perfect for a quick weeknight meal or a crowd-pleaser at gatherings.

  • 4 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 4 soft flour or whole wheat tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: mushrooms, roasted peppers, or fresh herbs (dill, oregano, basil, thyme)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add 1 chopped onion and 2 cloves of minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
  2. Stir in 4 cups of fresh spinach and cook until wilted, about 2 minutes.
  3. In a bowl, combine the sautéed spinach mixture with 1 cup of crumbled feta cheese. Season with salt, pepper, and any additional herbs of your choice.
  4. Heat a non-stick skillet over medium heat. Place a tortilla in the skillet, and sprinkle half with the spinach-feta mixture. Fold the tortilla in half, pressing gently.
  5. Cook for about 2-3 minutes until the bottom is golden brown and crispy. Carefully flip and cook the other side for another 2-3 minutes. Repeat with remaining tortillas and filling.
  6. Cut into wedges and serve hot, with sides of salsa or sour cream if desired.

Notes

Ensure to drain any excess moisture from vegetables to avoid soggy filling. Use a non-stick skillet for best results.
