Thai Peanut Chicken Wraps

A delightful and flavorful wrap filled with tender chicken, fresh vegetables, and a creamy peanut sauce.

  • 1 pound chicken breast, thinly sliced
  • ½ cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon lime or lemon juice
  • 2 cloves garlic, minced
  • 2 cups fresh vegetables (carrots, bell peppers, cabbage)
  • 4 large tortillas
  • ¼ cup chopped peanuts (optional)

Instructions

  1. Prepare the peanut sauce by whisking together peanut butter, soy sauce, honey, lime juice, and minced garlic in a medium bowl. Adjust the consistency with water if too thick.
  2. In a skillet over medium heat, add a splash of oil and cook the sliced chicken for 5-7 minutes until golden brown and cooked through.
  3. While the chicken cooks, slice fresh vegetables into thin strips.
  4. Assemble the wraps by laying a tortilla flat, spreading peanut sauce in the center, adding chicken and vegetables, with extra sauce as desired.
  5. Fold in the sides of the tortilla and roll it up tightly. Repeat for remaining wraps.
